Fluffy Chocolate Chip Cookies

Ingredients
  

  • 1 3/4 cups all-purpose flour
  • 1 1/4 cups semisweet chocolate chips
  • 3/4 cup dark brown sugar
  • 1/2 cup granulated suger
  • 14 Tbsp salted butter
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 tsp fine sea salt
  • 1 tsp corn starch
  • 1 tsp baking powder
  • 1/2 tsp baking soda

  • 1 large mixing bowl
  • 1 medium mixing bowl
  • 1 hand mixer
  • 1 Sheet Pan

Method
 

  1. In medium bowl, combine all-purpose flour, baking powder, corn starch, salt and baking soda. Whisk together and set aside

  2. Heat 10 tablespoons salted butter in 10-inch skillet over medium-high heat until melted, about 2 minutes. Continue cooking, swirling pan constantly until butter is dark golden brown

  3. Remove from heat and transfer browned butter to a large heatproof bowl. Stir remaining 4 tablespoons salted butter into hot butter

  4. Whisk until completely melted

  5. Add 1/2 cup granulated sugar, 3/4 cup packed dark brown sugar, 1 teaspoon fine sea salt and 2 teaspoons vanilla extract to bowl with butter. Whisk until fully incorporated

  6. Add 1 large egg and 1 large egg yolk and whisk until fully mixture is smooth with no sugar lumps remaining, about 30 seconds. Let mixture stand for 3 minutes then whisk for 30 seconds, repeating 2 more times. You will notice air pockets in the batter which helps make the cookies fluffy

  7. Stir in flour mixture until just combined (you will notice how soft and fluffy the batter is)

  8. Stir in 1¼ cups semisweet chocolate chips

  9. Divide dough into 16 portions, each about 2 tablespoons. Arrange 2 inches apart on prepared baking sheet

  10. Bake cookies 1 tray at a time until cookies are golden brown and still puffy, and edges have begun to set but centers are still soft, 10 to 14 minutes, rotating baking sheet halfway through baking
  11. Transfer baking sheet to wire rack; cool cookies completely before serving
