- Gather Ingredients

- Place flour on a clean working surface

- Use your measuring cup make a hole in the center of your flour to create a nest

- Add salt, extra-virgin olive oil and 3 eggs to the center of the nest

- Use your hands to bring flour inward to incorporate

- Knead the dough for 8 to 12 minutes. It will be shaggy at first. If it seems too dry, wet your fingertips with water. If it is too sticky, add more flour and continue to knead

- Shape the dough into a ball and wrap in Cling Wrap

- Set the dough aside and let rest for 30 minutes at room temperature

- Once dough has rested, cut into four even pieces

- Roll each section of the dough one at a time into an oval shap, keeping the other sections covered in Cling Wrap until ready to roll out

- Run dough through pasta roller starting with level one and working up to level 8

- Lay rolled out pieces aside until complete with all four pieces

- Once all four pieces of dough have been through the pasta roller, run the pasta sheets through the pasta cutter attachment of choice (pictured is the fettuccine cutter)

- Bring to boil a large pot of salted water and cook pasta for 1 to 2 minutes

- Strain off liquid in colander

- Enjoy this beautiful pasta with your favorite sauce

Never in a million years did I believe I could make homemade pasta! My husband bought me a KitchenAid mixer with pasta attachments for Christmas several years ago. It sat in the box for the first couple year because I had no idea how to use it and honestly was terrified by it. It has become one of my favorite kitchen appliances and I use it all the time. After making a few cakes with it, I decided to venture out to pasta. Pasta is one of my favorite items to make. It's inexpensive, uses far less ingredients than box pasta, and the flavor is not even comparable. Give it a try, it may not be perfect the first time, but the dough is very forgivable and the taste is outstanding!
