Creamy Chicken Primavera

This recipe has been one of my family’s favorite “go to meals” for years. It is the kind of comforting, colorful meal that feels both elegant and easy enough for a busy weeknight. Tender chicken, sautéed mushrooms, sweet red peppers, and a rich, velvety cream sauce come together in one pan for a dish that’s full of flavor and simple to prepare. Inspired by the fresh vegetables traditionally found in primavera recipes, this version adds a cozy, creamy twist that pairs perfectly with pasta, rice, or warm crusty bread. It’s a restaurant-style meal made right at home with wholesome ingredients and plenty of comforting flavor in every bite.

Notes
Recipe Notes & Tips for Creamy Chicken Primavera
- Slice the chicken breasts into evenly sized pieces so they cook quickly and stay tender throughout the dish.
- Fresh vegetables give the best flavor and texture. Red bell peppers and mushrooms add sweetness and richness that pair perfectly with the creamy sauce.
- Mince the garlic fresh rather than using jarred garlic for a brighter, more flavorful sauce.
- Let the mushrooms cook until they release their moisture and begin to brown slightly for deeper flavor.
- Heavy whipping cream creates the richest and smoothest sauce. For a lighter version, you can substitute half-and-half, though the sauce will be thinner.
- Stir the cream sauce gently over medium-low heat to prevent curdling or separating.
- Fresh basil added at the end gives the dish a fresh, vibrant finish and balances the richness of the cream.
- If the sauce becomes too thick, add a splash of chicken broth, milk, or pasta water to loosen it up.
- This dish pairs wonderfully with fettuccine, penne pasta, rice, mashed potatoes, or crusty bread.
- Add freshly grated Parmesan cheese for extra flavor and a more restaurant-style finish.
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat slowly over low heat to keep the cream sauce smooth.
- For extra vegetables, try adding spinach, broccoli, asparagus, zucchini, or cherry tomatoes.
